Possibly the one food pairing that many people
know is just how well cheese and wine go together!
With both cheese and wine having such variety in styles and production,
and having a history as old as the hills, this perhaps should not come
as any surprise.
Whatever your preferred style of cheese, whether you like a mild
or mature Cheddar, a soft, ripe, creamy Brie, or the "King of English
Cheese" in a Stilton, there is a wine that will pair with it perfectly!
We could even find a match for the humble Dairylea, if we really had to
(there will be no Dairylea at our cheese and wine tasting evenings!)
Why Cheese and Wine?
So why do cheese and wine go so well together? Well, with something as
subjective as taste, it depends who you ask. Some people will tell you
that the fat in the wine helps to soften the tannin in the wine, which
may help explain how cheese can help a high tannin wine more drinkable.
Then there's Malolactic Fermentation, which is the process that some
wines go through that converts which converts the sharp malic acid found
in apple skins, to the much creamier malic acid, which surprise,
surprise, is found in milk produce, and gives wines that have undergone
this process a creamy or buttery texture. With this in mind, it should
come as no surprise that creamyness of cheese will partner so well with

Our cheese and wine pairing workshops, and cheese and wine tasting
evenings are run regularly. The cheese and wine pairing will vary
depending on the night, but to whet your appetite, some examples of
parings from previous events include:
Delice de Bourgogne with Champagne
Crottin de Chavignol with Sauvignon
Taleggio with Nebbiolo
Manchego Curado D.O.P. with Rioja Reserve
Morbier with Gewürztraminer
Norfolk Dapple with Barrel Fermented
